Ack! I forgot what day it was yesterday, and I normally write my newsletters on Fridays! So it’s Saturday morning - I haven’t even had breakfast or coffee - and I’m gonna write up a quick one for you guys. I have notes! I just don’t have time to write up the bigger stuff I had planned, so those will move to next week’s list! ❤️
Some Food Stuff
You remember the Chobani Flips I mentioned a few weeks ago? I haven’t bought them again because they haven’t been on sale, but I’ve been making a yogurt treat that I really like!
Plain Greek yogurt
Raspberry jam (or strawberry or whatever)
Drizzle of honey
Crushed Graham crackers
It’s delicious!! I wonder, are dehydrated cream cheese chips a thing? Like chocolate chips but they’re made out of cream cheese somehow? That would be great in this, but I don’t know if that exists. 😄
About a hundred years ago when I lived in Washington DC, I would get Real Simple magazine. This was before I knew how to cook, so I’d only occasionally try the recipes in the magazine.
I came across this Potato Leek Feta Tart one time and have made it dozens of times since this. I got the ingredients and will be making it this week! NOTE: I’m pretty sure that the picture below (from their link) is NOT the right one. I have a clear image in my head of what it should look like, and that ain’t it.

Homeschool Stuff
We got two posters for our year from Ruby Reads Books, and then I got the corresponding books from Thrift Books! We picked James and the Giant Peach and Island of the Blue Dolphins, neither of which I’ve read before.
Our co-op started this week. Here are some of the classes the kids are taking:

LSU-S (that’s Louisiana State University at Shreveport) is offering some classes for homeschoolers, for kids 11 and older, so I’m tempted to get Alexander in one of them!
The only thing I don’t love about living out in the country is the DRIVING. It takes at least 25 minutes, up to 50 minutes, to get literally anywhere. Aldi? 25 minutes. Moor (coffee shop with a playground inside)? 35 minutes. LSU-S? 35 minutes. Science museum? 45 minutes. There is a Dollar General about 12 minutes away, which I’ll visit in a pinch.
So at 35 minutes away, we need to weigh the pros and cons of signing him up for a class there!
5 Random Thoughts
Yesterday I was at the grocery store, and the lady in front of me had to verify her age by stating her birthday. She said August 23 and then either 1964 or 1954 (I couldn’t hear very well)! Mine is Aug 23 1984. Neat! “Excuse me, did you say August 23?” “Yes.” “Mine is August 23 too!!!!” “Oh wow!!!!”
Have you seen K Pop Demon Hunters on Netflix? It’s so catchy. I love the animation style. There were a few parts that were dark, but the good wins out (as it does, in kid movies). The song Golden has been stuck in my head all week.
I think I’m pushing myself too hard lately and then not fueling myself properly, both with food and with sleep. I’m just achy and tired most of the time now! A few people on IG mentioned iron and vitamin D supplements, so I got a multi-vitamin that has 100+% of those, and we’ll see if that helps. I need to see my lady doctor anyway, and maybe she can do some blood work for me.
Alexander’s been doing sprints, and I’ve been doing them too! There’s a school in town that lets homeschoolers join their sports and extracurriculars. I spoke with the track coach, who gave me a suggestion for sprinting in order to prepare Alexander for the spring season. We’re not on the team officially yet, but I figured we can start practicing anyway. (We do 100 meters, 8 times in a row, with 45 seconds rest between them.)
I’m itching to go on vacation. It’s been a little while since we went to Colorado (mid May). We’re heading to Dallas in September, just for a few days, and we’d like to go to the beach in October!

I saw this on Facebook - what a great idea!! I think this looks really nice!

The meeting theme this past week was apples, since it was the start of school. These are pizza hand pies that turned out awesome. Pie crust cut-outs, pizza sauce + cheese + chopped pepperoni, egg wash on the edges, topped with pie crust cut-out. I crimped the edges and baked these for 25 minutes at 350F! They were a huge hit.
This was a few months after Cam and I started dating. It was a trivia night at a bar somewhere in DC. That top I’m wearing is a dress from American Apparel that I had in a few colors. And now I’m reminded I need to watch the Trainwreck documentary (on Netflix) about American Apparel!
Phew!
